3 lbs. smelt, cleaned
¼ cup freshly grated Parmesan cheese
½ cup milk
½ tsp salt
1/3 cup melted butter
1 ½ cups flavored bread crumbs
1. Wash and dry smelt.
2. Combine milk and salt in one bowl.
3. Combine bread crumbs and cheese in another bowl.
4. Dip smelt in milk, roll in crumbs.
5. Place smelt in a single layer in a well greased 15x10x1 baking dish.
6. Pour butter over fish and sprinkle liberally with paprika.
7. Bake at 500°F for 8-10 minutes.
